Potts Point’s Bistro Rex is where you’ll find restaurateur couple Baci Moore and Peter Curcuruto who met at a Rockpool Christmas party when both working for Neil Perry; and in 2017, after years working for other culinary institutions, decided to open their own brassiere in Sydney.
Bistro Rex is located within the Potts Point Village which recently celebrated with its Potts Point in Bloom Flower Festival – where championing the micro-precinct of cool and creative places, is what gives it its fine reputation.
Baci Moore spoke to The Write Drop for our At The Bar series.
MY CITY
I moved to Sydney when I was 19, and jumped straight into the restaurant scene. I have been fortunate enough to work with some of Sydney’s greatest chefs – Neil Perry, Tetsuya Wakuda, Martin Benn and Marty Boetz to name a few and now at Bistro Rex with Head Chef Fabio Salvato who is turning out delicious modern French/Mediterranean dishes with his team of creatives. We are extraordinarily lucky to have such a breadth of talent and choice in Sydney. Every night of the week you can choose whatever style of cuisine you desire and enjoy an incredible dining experience.
FAVOURITE FOOD MEMORY
Maison Sophie Pic in Valance, France. We managed to lock in a booking mere months before Sophie received her third Michelin in 2007. Every dish was ethereal. My love of food, wine and next level hospitality was cemented permanently from here on. Locally, I love the world class Catalina Restaurant in Rose Bay for special occasions and @mishys_sydney in Surry Hills for a more casual, healthy meal cooked with love experience.
FAVOURITE BAR
The Roosevelt in Potts Point is definitely a favourite and the very new Bobbie’s Bar in Double Bay.
DRINK THAT DESCRIBES YOU
Depends on the time of year. Barrel Aged Negroni in winter, Mezcal Margarita in summer, Champagne all year round.
BEST HANGOVER CURE
Same as always – don’t mix your drinks, stay hydrated and get a good night’s sleep. It’s the only way…otherwise Rosé!
BEST INTERSTATE BAR
Gimlet Melbourne. Loved the whole European aesthetic as well as the exceptional cocktails and service.
OVERSEAS BAR
I always recommend Dante, New York.
FAVOURITE WINE
I’m very fortunate to have enjoyed some pretty incredible bottles thanks to the generosity of wine collector friends over the years. Locally, Fergus at Sami Odi in The Barossa is making delicious vino. We are also longtime fans of Ray Naderson at Lethbridge near Geelong in Victoria.
FAVOURITE WINERY
I haven’t met anyone who didn’t rave about touring the Chateau’s in Champagne. That said, we have wonderful wine growing regions in many beautiful parts of Australia so start the journey here with Lisa Margan @marganwine, Libby Cuppitt @cuppittestate and Karena Armstrong @salopianinn.
NEXT DESTINATION
We love exotic! I just returned from our first trip to India which was epic on every level. Japan is always on our list for a repeat visit and Africa next year.
A DISH AT BISTRO REX YOU LOVE
MORETON BAY BUG OMELETTE with lobster sauce and trout roe with a side of Champagne of course. This decadent dish is also part of our $65 three course prix fixe menu.
