Aria Restaurant Assistant Sommelier Chris Hoy joined the Sydney team in February this year; bringing a wealth of experience from previous stints at Rockpool. His knowledge and love of world class vineyards and expertise in wine is what makes his approach unique – and helps inform the wine list that makes the cut at this reputed dining spot on the Harbour.

The Wild Rover, Surry Hills is the true definition of a neighbourhood bar, and their Rover’s Old Fashioned with a great Australian whisky is killer.

A dozen oysters, all to myself.

The Black Pearl, Fitzroy, VIC. The classics are always so precise, and the back bar is a pleasure to stare at.
FAVOURITE WINE
Volcanic wines are my current go-to. Caravaglio ‘Nero du Munti’ Corinto Nero Salina IGT, from a few small islands off the coast of Sicily. I’ve taken this wine to a few BBQs and it’s always a hit.

NEXT DESTINATION
A deep dive into Yarra Valley. I really admire the winemaking of Sarah Crowe of Yarra Yering, Sandra de Pury of Yeringberg and Sam Middleton of Mount Mary, and I look forward to exploring the smaller vineyards throughout the valley.
