You’ll find Head Chef Samuel Rozsnyoi at Chiswick in Sydney – the final touches now available as part of its autumn menu. The emphasis here is on celebrating simplicity with a focus on seasonal produce that’s approachable.
“The kitchen garden at Chiswick is providing endless inspiration for me; I rewrote our current menu many times as I couldn’t stop myself from coming up with dishes using the incredible produce at our doorstep,” says Samuel Rozsnyoi.
“In heading up the kitchen at Chiswick, I’m looking forward to reinterpreting the vision of the kitchens that have shaped me over the course of my career – Paci, Niland and Alvarez, to name a few.”
He grew up in Gladesville, Sydney and uncovered a passion for cooking while spending time in the kitchen with his mum. He began his career as an apprentice at Glebe Point Diner and went on to complete his studies at Ultimo TAFE while working at Cho Cho San. He’s lived and worked abroad and talks to The Write Drop for our At The Bar series.

Sydney is a melting pot of cultures, and that diversity is reflected in our food scene. From authentic Asian eateries to contemporary Australian cuisine and everything in between, we have so many options for great food. The harbour is beautiful, and we’re so blessed with our never-ending choices of beaches. I’m lucky in that my family and friends are all here; however, this makes Sydney a place that’s hard to leave.
FAVOURITE FOOD MEMORY
One of my most cherished food memories is dining solo at L’Arpège in Paris when I was just 24. It wasn’t just about the exquisite dishes crafted by the legendary Alain Passard—it was the entire experience. I had the unexpected pleasure of speaking with Passard himself, which was unforgettable.
FAVOURITE BAR
There’s something undeniably special about “She Loves You” bar on South King Street. It’s tucked away in a cosy nook near Sydney Park, and every time I walk in, I feel like I’ve stepped into a little slice of Paris. The vibe is effortlessly relaxed, the owners are welcoming, and the cocktail list is both creative and refined. A great bar to sit and unwind.
DRINK THAT DESCRIBES YOU
If I were a drink, I’d probably be a tall Americano—refreshing and a bit bittersweet. It’s a drink that’s both comforting and energising. I think it matches my personality pretty well.
BEST HANGOVER CURE
For me, nothing beats a hearty sushi feast after a night out. I love finding the freshest sushi I can and indulging in mountains of it, washed down with sparkling water. This is a combo that always hits the spot.
BEST INTERSTATE BAR
Whenever I’m in Melbourne, I make a point of visiting Embla. It’s earned a well-deserved reputation as an institution, and for good reason. From their impeccably curated wine list to continuously fantastic dishes, the Embla team never fails to impress.
OVERSEAS BAR
If you’re ever in Copenhagen, don’t miss La Fontaine on a Sunday night. It’s a jazz bar that feels like a hidden gem—dimly lit, atmospheric, and filled with incredible up-and-coming musicians. The tiny smoking room adds ambience and character, and the whole place just feels alive with creativity.
FAVOURITE WINE
One wine that truly captivated me is the Joh Jos Prüm 2017 Bernkasteler Lay Auslese from Germany. I first enjoyed it with a friend at a restaurant, and I was so taken by its delicate sweetness and hint of effervescence that I sought out a few bottles for myself. It’s almost like a dessert wine, but with a subtle sparkle that dances on the palate. Every sip is an experience.
FAVOURITE WINERY
Azienda Agricola Giuseppe Quintarelli in Tuscany is one place I can’t recommend enough. I tasted the most remarkable Montepulciano there—full-bodied, earthy, and beautifully balanced. The tour, led by Giovanni, was equally memorable. He was knowledgeable and passionate, sharing information and personal stories that made each glass even more meaningful.
NEXT TRAVEL DESTINATION
Japan is at the top of my travel list. It feels a bit wild that I haven’t been there yet, considering my love of Japanese cuisine.
