At The Bar with Joe Vargetto – Bianchetto Bar

When Joe Vargetto decided to open a bar next to his Italian restaurant Mister Bianco in Kew, he was in a New York state of mind; reeling on vintage Italian films with a desire to bring a slice of basement luxe to Melbourne.

At Bianchetto you enter a world of classy cocktails – where old cinema classics are projected on the walls for ambience, and pairingItalian snacks with classic cocktails is a must. Think arancini accompanied by a negroni, espresso martinis with tiramisu, or a slow cooked lamb shoulder with a local glass of shiraz.

FAVOURITE FOOD MEMORY

In the enchanting city of Lyon, France. 1997, I stumbled upon a hidden gem of a restaurant known as ‘La Cuisine des Artistes’. The cassoulet, a steaming pot of hearty goodness that exuded warmth and comfort. Layers of tender beans, succulent duck confit, and savory sausage mingled in a savory stew that spoke of tradition and history, each spoonful a taste of Lyon’s culinary heritage, a feeling of contentment and joy that only a truly exceptional meal could evoke. At Mister Bianco, I enjoyed an eye fillet with foie gras biscotto, spinach and Madeira with my wife Daniela. It’s a classic dish and it was a moment when I savoured the delicious food and took in the atmosphere of the restaurant we have created.

The Baxter Inn in Sydney for its extensive whiskey selection and comfortable speakeasy vibe.

FAVOURITE WINE

A memorable bottle I shared with friends and family was a Barolo from Piedmont, Italy.

Bindi in Gisbon, Macedon Ranges. It’s a must-visit for its picturesque vineyards and exceptional wines.

A SIGNATURE DRINK AT BIANCHETTO

The “Pink Tart” – a refreshing blend of raspberry, vodka, limoncello liqueur, and Prosecco. Served as raspberry sorbet in a glass and a mini carafe to pour in the other ingredients on top, it is vibrant, fun and delicious.

WHAT INSPIRED YOU TO OPEN THE BAR

 We wanted to create a space where guests could enjoy expertly crafted cocktails that complemented our restaurant’s Italian cuisine. We have created a bar that suits all occasions, from date nights to friend get-togethers, or pre and post dinner drinks. Lights are down and a projector screens old movies and Italian classics. Guests feel they could be anywhere from a New York basement to a Melbourne CBD hidden bar, right in the heart of Kew.
