At The Bar with Joseph Moussa – National Beverage Manager for Seagrass Boutique Hospitality Group

Joseph Moussa, Beverage Manager-National for Seagrass Boutique Hospitality Group spoke to The Write Drop for our At The Bar series. He’s behind the exceptional drink programs found at The Meat & Wine Co. restaurants and 6Head; The Rocks in Sydney.
MY CITY
Melbourne – It earns its obsession through its laneway culture, relentless cafe standards, and a hospitality scene that treats service as an art form rather than a transaction. There is a charm to ducking down a graffiti-lined alley on a drizzly 14°C afternoon and stumbling into a world-class espresso bar or subterranean cellar.

FAVOURITE FOOD MEMORY
Cumulus Inc. on Flinders Lane.
Anything Chef Andrew McConnell touches is remarkable, but for me, magic happens when you pull up a stool at the marble bar. Eating incredible food, breaking bread with strangers sitting beside you, and turning casual conversations into genuine connections -that for me is the true spirit of hospitality.

FAVOURITE BAR
Siglo.

The Ritual: I love starting downstairs at The European with a classic steak tartare washed down with a glass of Red Burgundy, before heading up to Melbourne Wine Room or climbing the stairs to Siglo.
The Atmosphere & Order: Siglo displays an energy at 1:00 AM that very few other bars in the world can replicate – sitting out on that terrace overlooking Parliament House with the city humming below. My go-to order is a classic, bone-dry Martini with a single Gordal olive- the exact ones we pour across our Seagrass venues. That is generally followed by a Negroni, and a cheeky,Islay single malt whisky-just because.

BEST HANGOVER CURE
A shock-to-the-system cold shower followed immediately by a steaming hot bowl of pho from Pho Bat Dan on Lonsdale Street. It restores the soul and resets the palate in about twenty minutes flat.
BEST INTERSTATE BAR

Bar Normandy at Restaurant Hubert (Sydney).

The Atmosphere: Tucked beneath Bligh Street, descending into Hubert feels like stepping straight into post-war Paris. While Bar Pincer buzzes on the right, I tend to head left to Bar Normandy. It stays open until late with a sultry, candlelit energy that completely shuts out the city above.

The Draw & Order: It nails the dual brief that every great beverage manager looks for: precision cocktail craft alongside an extraordinary, serious list of wines by the glass. I love propping up at the bar late with a dry, impeccably balanced classic cocktail, before exploring their brilliant, French-leaning glass pour list.

FAVOURITE WINE
Mount Mary Quintet (Yarra Valley, VIC). A masterclass in Australian winemaking. It’s a Bordeaux blend defined by restraint, perfume, and incredible structural finesse rather than brute force. Delicate violets, fine tannins, and a persistent, elegant line that only improves with time in the bottle.
A WINERY YOU RECOMMEND
Ten Minutes by Tractor (Mornington Peninsula, VIC). Visiting their cellar door in Main Ridge is a masterclass in cool-climate terroir. Tasting single-vineyard Chardonnays grown only a few kilometres apart -yet expressing distinctly different acidity, flint, and fruit profiles -reminds you why site selection matters so deeply.

NEXT DESTINATION
San Sebastián and the Basque Country, Spain. To dive headfirst into the birthplace of pintxos culture. Hopping between casual bars in the Parte Vieja, drinking Basque Txakoli poured from great heights, and soaking up the regional reverence for produce and seafood. The essential finale? Pulling up a spot at La Viña for their iconic, caramelized Basque cheesecake, finished with a matching glass of rich, nutty Oloroso Sherry.
DINNER PARTY WITH 3 FAMOUS PEOPLE…
Diana, Princess of Wales: For her effortless class, natural warmth, and immense humanitarian heart that broke conventions. Plus, I have to admit, I had a massive crush on her throughout my late teens and early twenties-she was simply captivating.

Dean Martin: For that legendary cheeky streak, effortless cool, and to hear firsthand about how he used his platform to actively push back against colour separation during the Rat Pack era. I’d gladly shout him a Rusty Nail, his favourite drink, to get the stories flowing.

Barack Obama: For his rare ability to swim against the political tide with calm, vision, and grace under intense pressure. And honestly? I reckon I could take him in a game of one-on-one on the basketball court.

BEST THING ABOUT YOUR JOB
No two days are ever the same, but the best part is our venue teams -our managers, chefs, kitchen hands, waitstaff, bar staff, and supervisors are the true heroes. Their commitment is phenomenal; they sacrifice nights and weekends away from loved ones, lock up in the wee hours, and give everything to our guests. The spotlight belongs entirely to them, in my view. Working alongside people of all cultures, from every corner of the world and watching them develop into true industry professionals is the most rewarding part of what I do. They do their family proud, no doubt.
