At The Bar with Executive Chef Tony Moss

The landmark Palace Hotel in Camberwell has reopened its doors after a $7.5 million dollar renovation. Here it’s all about comfort pub food on the ground floor, while upstairs dining is all about share plates and crafted cocktails to set the mood.

Moss is all about using top quality produce with an emphasis on meals you can snack and share with ease – think Roman-style pizza matched with a negroni.

Executive Chef Tony Moss talks to The Write Drop for our At The Bar series.

MY CITY

I live in Melbourne CBD. I really love Melbourne because it has so much to offer, from world class Sporting Events like AO and F1, The Arts Centre and NGV, to world class dining, wineries, beaches and the diverse city centre. You’ve gotta love the free trams to get around too.

FAVOURITE FOOD MEMORY

I always think about the Palm Sugar Glazed Sourdough and Dry Aged Duck at Aru, both spectacular dishes. The sugary sweet crunch and complexity of the sourdough and the beautiful crisp duck skin and umami of the flesh is very memorable. What a treat.

FAVOURITE BAR  

Living in the city, I really like the tucked away Union Electric, a vibing laneway cocktail bar and rooftop. My go to drink is the ‘Head In The Clouds’ cocktail, using the Four Pillars Shiraz Gin.

DRINK THAT DESCRIBES YOU

Gin and Tonic, can be classy, boring or spicy depending on the day.

BEST HANGOVER CURE

I recently discovered Korean Pear juice. It’s a winner to have before drinking in the morning with a turmeric ginger tonic, and I also love to wash a hangover down with a classic pub Fish and Chips from Young and Jacksons, which is only a short stroll up the road.

BEST INTERSTATE BAR 

A little touristy I know, but I don’t mind a glass of champagne and some oysters while people-watching at Opera Bar in Sydney.

OVERSEAS BAR

Cara Cara at the Proper Hotel in Downtown Los Angeles. It has amazing city and mountain views, the menu is concise with a stand out Lobster Roll, and the cocktails featuring tequila and mezcal are well worth it, along with an extensive spirits list. Make sure you take your sunglasses and sunscreen!

FAVOURITE WINE 

Stonyridge Larose, a bordeaux blend from Waiheke Island, New Zealand.  I was lucky enough to work in this magical place and the wine is just as spectacular.

FAVOURITE WINERY 

Tarrawarra Estate in Yarra Valley has an amazing Cellar Door, the surrounds are beautiful and the Pinot Noir is well worth the journey from the city.

NEXT DESTINATION

South America. I really want to see the vibrancy of Rio in person and try a real Caipirinha, hopefully on a beach. Watch out Copacabana!
