At The Bar with Bottega Head Chef Axel Archenti

At the top end of Bourke St is where you’ll find Bottega Restaurant – a favourite pre-theatre pitstop with a speedy two-course menu that sees you never miss the curtain call, and now, with Rising Festival in town; the team has curated a new mid-week special that’s ideal when you’re heading out for late night art and live music.

Bottega’s Riviera Date Night is a winter stayer  – bringing the best of the Italian coast to the heart of Melbourne every week.

Head Chef Axel Archenti leans into hit roots in La Spezia, with the coastal menu that features crispy school prawns and calamari alla busara, finished with a zesty lemon sorbet – and a splash of vodka. Of course, it’s business as usual with the a la carte menu on offer too.

Axel Archenti has served as the Head Chef at Bottega since 2023 and has been part of Bottega since 2017, rising through the ranks from chef de partie.

MY CITY

Melbourne has been home for almost 10 years. I love the art scene, world-class food and coffee, plus the exciting calendar of events, including my favourite, the Formula 1 Grand Prix.  I always buy tickets for this and take the time off to enjoy it every year. Something I’ve always loved doing while living here is visiting the Queen Victoria Market for its ever-changing selection of fresh, seasonal produce. I always enjoy starting with six oysters as a pre-shopping snack.

FAVOURITE FOOD MEMORY

Cold Udon noodles enjoyed while travelling in Japan from Yamazakiya Udon, right near the base of Mount Fuji. It was a perfect example of simplicity done to perfection. The serene setting and the clean, delicate flavours made it unforgettable.

FAVOURITE BAR

Caretaker’s Cottage – it’s just a short walk from Bottega, making it the perfect post-shift place to go. Despite being right in the heart of the CBD, it has a cosy, tucked-away feel that I really love. The atmosphere is always spot on, and the service is next level. I appreciate how the team takes the time to guide you through their rotating monthly cocktail list, there’s always something new to try, which is generally what I go for.

Milano Torino. A classic Italian aperitivo that’s perfectly bittersweet – just like me.

BEST HANGOVER CURE

If I have to be productive, I need a cold shower and litres of water. If the following day is a write-off, I opt for a couple of Macca’s hash browns, the couch, and a healthy dose of guilt.

BEST INTERSTATE BAR

Cantina OK! in Sydney is loud and full of energy, just how any great bar should be. Their margarita is my go-to when I’m setting the mood for a good time, and when I’m travelling, I’m always looking to have a good time.

OVERSEAS BAR

London’s bar scene is fantastic. I used to live there, and the options are endless. For something a bit more high-end, Lyaness stands out. If you’re after a more late-night feel, Swift Soho always delivers. London always has something to offer, no matter what you’re looking for.

FAVOURITE WINE

On a trip home to Italy in 2024, I shared a bottle of Amarone della Valpolicella Bolla 2016 with close friends. It was rich, bold and delicious alongside a big steak. The perfect bottle to enjoy while catching up with friends.

FAVOURITE WINERY

I recently visited Port Phillip Estate on the Mornington Peninsula. The wine is delicious, particularly the Pinot Noir and the stunning views of the vineyards stretching out to the ocean are beautiful. The winery’s sleek, futuristic architecture adds a unique touch, making the whole experience feel special.

NEXT DESTINATION

Italy, a place I know well. This trip will be special since it’s my partner’s first time. We will be visiting the regions of Lombardy, Piedmont, Liguria and Veneto to spend time catching up with friends and family. I’m excited to share all the amazing food and wine with her, particularly Focaccia and Stracchino from my hometown of La Spezia.
